Hawa Hassan Shares the Spicy Somali Pasta Recipe From Her New Cookbook, ‘In Bibi’s Kitchen’

Ingredients

3 tablespoons extra-virgin olive oil or canola oil

2 garlic cloves, minced

1 small green bell pepper, stemmed, seeded, and finely chopped

1 small red onion, finely chopped

1 pound ground beef

3 tablespoons Xawaash Spice Mix (see below)

1 teaspoon kosher salt, plus more as needed

2 tablespoons tomato paste

One 28-ounce can diced tomatoes, with their juices

Cooked spaghetti (or whatever shape pasta you like) and coarsely chopped cilantro, for serving

Place the oil in a large skillet set over medium-high heat. Once the oil is hot, add the garlic, bell pepper, and onion. Cook, stirring occasionally, until the vegetables begin to soften, about 8 minutes. Add the beef, Xawaash, and salt and cook, stirring occasionally to break up the beef, until the meat is browned, about 15 minutes.

Add the tomato paste and diced tomatoes (and their juices). Fill the tomato can halfway with water and add it to the pot. Stir well to combine, being sure to scrape up any bits stuck to the bottom of the skillet. Increase the heat to high and bring the sauce to a boil, then decrease the heat to low and simmer, stirring occasionally as the sauce cooks, for 30 minutes. Season the sauce to taste with salt. Serve hot over cooked spaghetti, with the cilantro sprinkled on top. Leftovers can be stored in an airtight container in the refrigerator for up to a few days and rewarmed in a heavy pot set over low heat (stir while you heat).

Xawaash Spice Mix

One 2-inch piece cinnamon stick

½ cup cumin seeds

½ cup coriander seeds

2 tablespoons black peppercorns

6 cardamom pods

1 teaspoon whole cloves

Berg is an avid reader and loves short stories: “I’ve always found short stories to be such an interesting way to gather information and learn about whatever the author’s trying to tell us.”

She spoke with Shelagh Rogers about three of her favourite short story collections by Canadian women authors: Shut Up You’re Pretty by Tea Mutonji, Guest Book: Ghost Stories by Leanne Shapton and Even that Wildest Hope by Seyward Goodhand.

“The short stories here definitely read more like a novel, especially in comparison to a lot of the other short story collections I read, which are usually not linked by a protagonist or a narrator.

“You kind of jump forward in time from the protagonist Loli. She’s this very young girl, a new immigrant to Scarborough. You’re just watching this person get dropped into the middle of cold Canadian winter, figuring out their life and trying to find a space for them.

The short stories here definitely read more like a novel, especially in comparison to a lot of the other short story collections I read, which are usually not linked by a protagonist or a narrator.

“The writing of that first story of that very young protagonist was really fascinating to me because it sounded young. It didn’t sound like an adult woman was writing it. But it also still kept the distance that is kept throughout the short story collection.

But it’s almost like you and the narrator Loli are standing on one side of a

Ina Garten gives a tour of her kitchen, shares design tips for optimal cooking

It’s the perfect time of year to cozy up with some comfort food, and Ina Garten has some tips to make your fall and winter cooking as easy as possible.

The Barefoot Contessa, as she’s known in her popular Food Network show, stopped by TODAY’s fourth hour on Tuesday to show co-hosts Hoda Kotb and Jenna Bush Hager around her East Hampton kitchen and offer some design advice.

“When I’m designing a kitchen … I think of setting the stove, the sink and refrigerator in a triangle so you can move around really well,” she explained, adding that in her own kitchen, these three appliances are “really close together, but they also have a lot of workspace in between.”

“I always like the sink to have a really nice view,” Garten, 72, continued. Her kitchen sink points to her beloved garden where she grows fresh produce and hosts outdoor dinner parties.

The “Modern Comfort Food” author also showed how she leaves her everyday items out on the counter but arranged “in a neat way.”

“I’ve got all the utensils … I have silver spoons for tasting and stirring, and whatever ingredients can just sit out, and knives,” she said.

But her design genius doesn’t stop there: The former White House budget analyst also provided some know-how on putting together a stunning cheese board — with the ingredients she had on hand.

“You can go into your pantry and see what you have,” Garten said. “I always like something right in the middle as a block, and then I put things around, colorful things like apricots. I’ve got two different cheeses, one creamy, one blue.”

“I think very often people put apricots everywhere and then they put figs everywhere, but you
